The Cornish Capon is our own heritage Cornish cross hybrid. Bred to forage the fields and forest of our farm on Upper Cow Creek, our chickens range freely and enjoy foraging on grasses, seeds, flowers, plants, fungi, and bugs.
Capons: A Traditional Poultry Delicacy
A capon is a male chicken that has been castrated at a young age and then raised slowly to a larger, more mature size than an ordinary broiler. The change in hormones affects both growth and behavior. Capons are typically calmer than intact roosters, and instead of developing the firm, lean muscle associated with a mature male bird, they put on more fat within and around the muscle.
That extra fat is the reason capon meat is so highly prized. It produces a bird that is exceptionally tender, moist, and richly flavored. A well-raised capon can grow substantially larger than a standard roasting chicken while retaining a delicate texture. The generous breast, plump legs, and fine marbling make it especially suitable for roasting, where the fat slowly bastes the meat as it cooks.
Capons have a long culinary history in Europe. In France, chapon is traditionally served for Christmas and other important celebrations. Certain regions are particularly known for carefully raised capons, which may be finished on grain or dairy products to develop their characteristic flavor and texture. French cooks often roast them simply, allowing the quality of the bird to remain the focus.
In Spain, capón is also associated with holiday tables, family gatherings, and festive meals. Spanish preparations may include savory stuffings, dried fruit, nuts, wine, herbs, or regional spices. Because a capon is large enough to feed a gathering, it serves as both an impressive centerpiece and a practical celebration bird.
Capons are uncommon in modern American supermarkets because they require more time, feed, and skilled husbandry than fast-growing broilers.
